The first birthday of your beloved baby is the main event in the family. What's a celebration without sweets? You can make a cake for a 1-year-old girl with your own hands, and if you try a little, it will turn out no worse than an expensive, custom-made one.

Cake without mastic for a 1 year old girl

Of course, on such a wonderful holiday I would like to amaze the guests with something unusual. However, it is not easy to make figures from mastic, and there is not always enough time and experience for this. Therefore, you can do without extra effort and bake a cake without mastic. It will still look great though.

To implement the idea you will need:

  • 1 egg;
  • half a glass of premium flour;
  • a can of high-quality condensed milk;
  • half a liter of cream;
  • 3 tbsp. l. powdered sugar;
  • peaches (canned or fresh).

The algorithm of actions is simple:

  1. Beat the eggs, pour in a can of condensed milk, add flour, baking powder and stir the whole mass thoroughly. You will get a liquid dough, which should sit for a little (20 minutes) until small bubbles appear on the surface.
  2. The biscuit is baked in separate layers. You can use a round shape for this. If there is none, then you can draw a circle on the parchment over which to distribute the required amount of dough.
  3. The thin cake is baked for only five minutes, the temperature is 180 degrees. You cannot let the cakes turn golden brown; they must remain soft.
  4. The cream is made by whipping cream with sweet powder. They “butter” the whole cake well. Peaches cut into slices are laid between the cakes. The top of the delicacy is decorated with cream and the remaining fruit halves.

Festive efforts on the occasion of your child’s first birthday are always pleasant: you need to buy gifts, set the table for guests, order dessert. Regarding the latter, making a cake with your own hands is much more pleasant, especially since it does not require a lot of money and time.

Yes, the shelves of today's stores are literally bursting with sweets, it's simply dizzying, and this is not to mention all sorts of confectionery shops. But if you are concerned about the health of the little birthday boy and his guests, then think about it. Have no doubt, homemade dessert can be much tastier and healthier than custom-made dessert. Try any of the two recipes given in the article and see for yourself.

With gingerbread

Gingerbread cookies, or toppers, are a great decoration for any cake. They will look great on a dessert prepared for a girl’s birthday.

To make them you will need the following products:

  • 170 g honey;
  • 100 g sugar;
  • half a kilo of flour;
  • 130 g butter;
  • 2 eggs;
  • 1.5 teaspoons of soda;
  • spices – cinnamon, ginger, coriander;
  • egg white;
  • lemon juice;
  • 160 g powdered sugar;
  • gel dyes;
  • wooden skewers
  • toothpick.

Gingerbread cookies are prepared like this:

  1. Mix soft butter with sugar, eggs, honey. Add flour and make a dough. Put it in the refrigerator for about twenty minutes.
  2. Form gingerbread cookies by rolling out the dough into a layer up to half a centimeter thick and cutting out figures using molds. In their absence, you can try using a knife to cut out little animals, stars, flowers and other figures using a pre-made paper stencil.
  3. Bake the preparations. Temperature – 180 degrees, time – 10 minutes. Insert wooden skewers into hot products.
  4. Colored designs on gingerbread cookies should also be made using a paper template. Each detail of the design is cut out of paper separately and then placed in the right place on the gingerbread. Small punctures are made with a toothpick along the entire perimeter of the part. This way the icing won't spill all over the gingerbread.

The base for the glaze is made like this: beat the egg whites with powdered sugar and a few drops of lemon juice with a mixer. The contours of the designs on the gingerbread are outlined with white icing without dyes. To do this, the mass is placed in a pastry bag with the narrowest nozzle. If it is too thick for such a miniature work, you can use a regular plastic bag, cutting off its corner.

While “drawing”, mistakes can be corrected with a toothpick.

The glaze can then be divided into portions and mixed with different colors. After the white outline of the designs on the gingerbread cookies has hardened, you can paint them with multi-colored compositions.

The most beautiful children's dessert with mastic

Of course, a mother will be able to bake the most beautiful cake in the world for her 1-year-old baby and decorate it no worse than in an expensive confectionery shop. The main advantage of such a product is that it will be much tastier than store-bought. Moreover, the products used in preparation will be the freshest and most natural.

Here's what you'll need:

  • 150 g flour;
  • a glass of sugar;
  • half a liter of cream;
  • a stick of butter;
  • a can of condensed milk;
  • 4 eggs;
  • canned or live peaches;
  • 200 g marshmallow;
  • half a kilo of powdered sugar;
  • food colorings.

Preparing the biscuit:

  1. Whites and yolks are whipped separately with sugar.
  2. Then carefully join together using a mixer.
  3. Next, add sifted flour in small portions.
  4. The biscuit is baked for 25 minutes at a temperature of 180 - 190 degrees.

The biscuit should be cooled and cut into cakes.

Make the cream by whipping the cream with powdered sugar. Then we assemble the cake.

  1. Grease the cakes with buttercream, place chopped fruit between them. To soak, put the cake in the refrigerator.
  2. In the meantime, beat soft butter with condensed milk. Cover the cake twice on all sides with the resulting mixture. To harden the first and second layers of glaze, put it back in the refrigerator.
  3. Let's prepare the mastic. Place a couple of tablespoons of butter on top of the marshmallows and put the resulting mixture in the microwave for 10 seconds. Then mix everything, adding powdered sugar. If you plan to make multi-colored figures, then the marshmallows should be divided into several portions and melted with butter and appropriate food coloring each.
  4. Turn one portion of mastic into a large layer and cover the entire cake with it. Use multi-colored compositions to make figurines and flowers. So that they stick well to the surface of the cake, they are lightly moistened with water. The bottom of the cake can be covered with an imitation ribbon with a bow made from mastic.

Baking a biscuit

Preheat the oven to 180 degrees. Line a 16cm diameter mold with baking paper. Take 4 eggs, separate the whites from the yolks. Beat the yolks with 60 g of sugar until creamy and almost white. Beat the egg whites until stiff, add 60 g of sugar and continue beating until whisk marks form, density and shine. Carefully, preferably with a silicone spatula, folding from bottom to top, fold the whites into the yolks. Sift 120 g of wheat flour. Using the same gentle movements, add it to the egg-sugar mixture. Make sure that there are no unmixed “islands” of flour left in the dough, but try to keep it airy! Pour the dough into the mold, carefully level it and put it in the oven. Bake for about 30 minutes, do not open the oven, preferably during the entire baking time or at least the first 15 minutes! We check the readiness with a dry thin splinter. When pressed, the finished biscuit should spring back. Remove from the oven, let stand for five minutes, run a thin knife between the walls of the mold and the edges of the sponge cake, remove the sponge cake from the mold and turn it over onto a wire rack. You can simply turn it over onto a flat surface lined with baking paper. It wouldn't hurt to wrap it in cling film either. Leave for 8-12 hours: the classic sponge cake must stand, otherwise it will become soggy from impregnation and will break and crumble badly.

Unit Shaped Cake

The baby's first birthday cake can be designed as a unit. First, you should bake several sponge cakes, and then, using a paper template prepared in advance, cut out a large number “1” from them.

What products you will need:

  • 12 eggs;
  • 2 tbsp. white sugar;
  • 2 tbsp. premium flour;
  • baking powder or soda.

The cakes are soaked in sweet syrup. The cream for this cake can be prepared with cream or sour cream. The dessert should be coated with the selected composition not only between the cake layers, but also on all sides. Inside you can lay a layer of fruits and nuts, and on top, wrap the delicacy in a layer of mastic and place the figures you prepared yourself on it. Decorate the bottom of the cake with sugar lace, which can be bought at a pastry shop.

For the figures, you should first make paper templates and carefully cut out all the details using different tools - a knife, a toothpick, etc. You should try to make the figures look as natural as possible.

From children's cookies with cream

A young mother may not have enough time and energy to prepare an exquisite cake. The purchased one is not always successful. Therefore, it is better to prepare a baby cake for your baby’s first birthday with your own hands, but without unnecessary fuss. There is no need for an oven.

You will need the following products:

  • a pack of children's cookies;
  • one yogurt for babies;
  • one or two children's cottage cheese;
  • sugar to taste;
  • a bag of cake jelly;
  • favorite fruits.

The cake will turn out quite small. If desired, the quantity of products can be doubled or even tripled.

  1. Soak gelatin in 50 ml of water.
  2. Mix yogurt and cottage cheese, add sugar.
  3. Heat the gelatin until it dissolves well. Pour into curd cream, stir.
  4. Cover some convenient container with film, place the cookies in it and fill them with the resulting cream. Put everything in the refrigerator.
  5. When the cream hardens, remove the container and turn it over onto a plate. Remove the film from the finished dessert and decorate it with fruit. Fill them with jelly, if desired.
