Baked eggs with ham
This recipe is perfect for a light but festive start to the day.
Ingredients
- Egg – 2 pcs.
- Ham or salami sausage – 50 g
- Round bun – 1 pc.
- Hard cheese – 50 g
- Spinach – 100 g
- Broccoli – 100 g
- Pepper - to taste
- Salt - a pinch
Preparation
- Let the spinach defrost and dry it with napkins or a towel. Boil the cabbage in salted water for 5 - 7 minutes, since we need it half-raw, and leave it in a colander to dry.
Instead of broccoli, you can use asparagus in the same proportions.
- We cut the bun and, using a dessert spoon, remove part of the crumb from both halves (a circle with a diameter of about 3 cm and a depth of at least 2 cm), grease the inner sides with butter and place in a hot oven to brown at a temperature of 220 - 250 degrees for about 5 minutes.
- Meanwhile, cut the ham into thin small strips.
- Let the finished halves of the buns cool a little, and then layer chopped ham (or sausage), grated cheese (just set aside 2 tsp for the topping), spinach and broccoli around the edges. It should look like a nest.
- Break the eggs into a separate bowl and carefully place the yolks into the recesses with a tablespoon. Divide the egg whites evenly if it fits.
- Sprinkle with cheese and bake at 200 degrees for 10 minutes. Make sure that the yolk does not overheat - it should remain liquid.
Serve the finished eggs hot with a cup of fragrant coffee or a glass of freshly squeezed juice.
Canapes with red caviar
And you can complement them with canapés with red caviar. A classic, everyone’s favorite sandwich is never out of place on any holiday table, and even more so for breakfast on a birthday. And it’s easier than ever to prepare it.
For canapés we will need 4 slices of loaf, from which we will squeeze out eight circles with a mold, two from each.
- Then mix 2 tablespoons of fatty, non-acidic sour cream or soft cottage cheese with 1 teaspoon of finely chopped dill or cilantro, add black pepper, salt and spread on bread circles. Place red caviar on top.
- You can optionally put lemon slices on the skewers, or serve without them.
- If you have time, dry the pieces of bread a little in the oven. No more than 3 - 4 minutes at 200 degrees. They should not be brown or hard, just slightly “stuck”.

Ingredients
- Chicken fillet – 250 – 300 g
- Champignons – 300 g
- Cheese – 200 g
- Egg – 2 pcs.
- Cream or milk 3.5% – 30 ml
- Wheat flour – 200 g
- Medium onion – 1 pc.
- Butter – 50 g
- Basil, black pepper - optional
- Salt - to taste
Preparation
- First, let's prepare the shortbread dough. It will need to be kept in the refrigerator for at least 30 minutes, so we calculate the time in advance.
- Grind soft butter with egg and salt, add flour and, if necessary, a little water. Knead the dough, roll it into a ball and put it in the cold.
- Now let's get started with the filling: let the fillet boil in a small amount of salted water. We cut the mushrooms and fry them together with chopped onions, season with basil, black or allspice.
- Cool the meat and chop finely. Mix together with onions and mushrooms.
- Grease the baking dish with butter or vegetable oil (in the first case the cake will be more aromatic), roll out the dough or simply distribute it with your hands, forming high sides. We spread the filling.
- We make the egg mixture: beat 1 egg with grated cheese and cream, pour it over our pie and bake at 180 degrees for about 40 minutes. Adjust the time depending on the resulting height of the cake.
When ready, remove it from the mold and cool. The cake for the birthday boy is ready for the festive breakfast!
Chocolate croissants
If you want to bake something sweet, then chocolate croissants for the holiday will be the most suitable option - quick, tender and very tasty!
- Defrost the puff pastry roll and roll it out into a layer 5 mm thick.
- Cut into small triangles the size of the future croissants and place 2 squares of dark or milk chocolate at the base (on the wide part).
- Roll the triangle into a tight tube, brush with egg and place on a baking sheet.

Ingredients: 10 medium potatoes, a couple of tablespoons of coarse flour, 2 tablespoons of vegetable oil, ground pepper and salt at the discretion of the cook. To create the minced meat, prepare 45 grams of dried porcini mushrooms, 2 onions, 3 tablespoons of vegetable oil, table salt and pepper powder.
- Grate the potatoes into fine chips. Squeeze the juice out of it, let the liquid brew a little. Add the starch sediment back to the vegetables;
- Salt the future dough for the balls and shape it into flat cakes according to the number of guests. You will need to place minced mushrooms in the center of each;
- To prepare minced porcini mushrooms, soak them in cold water for 4 hours. Boil mushrooms in it. Drain the mushroom broth (but don’t rush to get rid of it), and chop the white mushrooms finely and fry in a generous layer of oil. Add chopped onion there and season the mixture with salt and pepper. Some people add sour cream to it, but this is not necessary. In addition, if you overdo it with the amount, the minced meat will turn out to be too liquid;
- Place a spoonful of minced porcini mushrooms and onions in the middle of the flatbread, then roll into balls. Dip them in flour and place them in a duck bowl;
- Pour the mushroom broth over the potato balls and bake in the oven for about 30 minutes.
Marbled beef in red wine
You need: a kilogram of marbled beef (you can take regular one), rosemary, olive oil, red onion and a standard bottle of dry red wine.
- Cut a kilogram of good beef tenderloin or young bull meat across the grain;
- Place the meat in a frying pan seasoned with olive oil. Fry in a frying pan for no more than 5 minutes;
- Pour dry red wine generously over the beef. Keep the meat in the pan and stir it until all the wine has evaporated. Then add thick red onion rings and steam the meat in the pan, covered, until thoroughly cooked;
- A minute before removing the dish from the heat, season the beef with chopped rosemary. You can serve the meat with fried potatoes, but beef goes even better with wild rice, red split lentils or a legume called mung bean.
Shrimp in cream and garlic sauce
Ingredients: 800 grams of frozen shrimp, 2 cloves of garlic, 50 grams of butter, 200 milliliters of thick fresh cream, 3 tablespoons of dried chopped parsley, salt.
- The holiday menu should also include seafood dishes. They are beneficial for the body, especially for men. First of all, melt the butter in a frying pan. Add crushed garlic there, stir slowly until it is covered with a golden crust;
- Pour the cream into the hot pan and stir it with a spoon. Hold for another 2-4 minutes and reduce the heat pressure. The seafood gravy is ready;
- Pour pre-thawed shrimp into the pan. They need to simmer for 8 to 10 minutes. At the very end, add parsley to the dish and stir the resulting dish;
- Remove the shrimp and place them on serving plates. Do not remove the sauce from the heat yet, it needs to thicken. Once the creamy garlic flavor has intensified, pour the gravy from the pan into a neat saucepan. If there will be a lot of guests, it is better to prepare two or three vessels. Serve shrimp in cream and garlic sauce with round rice.
Unusual pumpkin roast
You need: 600 grams of pumpkin and pork, one sweet pepper, 45 milliliters of concentrated wine vinegar, a pinch of ground chicory, a tablespoon of sand, salt, 3 glasses of water, ground black pepper, 20 milliliters of vegetable oil, 110 grams of Poshekhonsky cheese.
- Cut the pumpkin, peeled and seeded, into thin slices. It needs to be stewed in water, sugar and wine vinegar. After half an hour, remove the vegetable from the heat and drain the broth;
- Cut the pork into slices and soak in vegetable oil for 30 minutes. Add a little chicory, salt and ground pepper there;
- Place the marinated pork in a baking dish. Place pumpkin pieces on top;
- Place red pepper shavings on top and place in the oven for 30 minutes. Its temperature should reach 180 degrees Celsius. When the dish is ready, you need to sprinkle it with grated Poshekhonsky cheese. An additional 5-8 minutes in the oven will allow the cheese to form a firm crust. - Coconut flakes – 150 – 200 g
