  6. The cakes are baked quickly, no more than 5 minutes at 180 degrees.
  7. Sour cream, whipped with granulated sugar, coats the layers.

Fruits and berries for decorating a children's cake at home

Fruits are the easiest and, perhaps, the most useful way to decorate cakes for children's parties. You can use any small berries for decoration. Raspberries, blackberries and strawberries are great for decoration. The latter can be used either whole or cut into halves. Exotic fruits are also suitable for decoration: tangerine slices, orange half-circles, banana and kiwi slices, pineapple or mango slices.

You should not place fruit directly on the surface of the cake. It is best to secure them with some sticky or viscous material. Buttercream will perfectly highlight the fruit, but more on that below. It is best to combine like with like. So the best option in this case is fruit jelly. To prepare this decoration you will need:

  • fruits;
  • fruit juice – 0.5-0.6 l (usually apple juice is used, but you can use any other);
  • powdered sugar – 150-180 g (one glass);
  • gelatin powder – 1 package.

Pour a glass of juice into a clean container and pour in gelatin. When it swells (after about 45-60 minutes), place the container in a steam bath so that the gelatin completely melts. Then pour the remaining juice into the resulting solution, add powdered sugar and mix everything thoroughly.

Pour some of the jelly (about 100 ml) into a bowl with a flat bottom and vertical walls, arrange the chopped fruit in it beautifully and pour in the remaining jelly mass. When the jelly hardens (approximately 1.5-2.5 hours), separate it from the walls of the mold with a hot knife and carefully turn it over onto the cake. The easiest way to hide the border between the base of the cake and the jelly is to use cream.

It can be made even simpler. Place the cake in a springform pan so that its edges are at least 30 mm above the surface. Pour part of the finished jelly mass (about 100 ml) into a container with a flat bottom and walls. When the jelly hardens (1.5 hours), place it on the surface of the cake. Now you can place the fruit on it and pour the remaining jelly mixture over it. Place the decorated cake in the refrigerator for 3-4 hours. Before serving, remove the cake from the ring by running a hot knife along the edge of the mold. By the way, instead of preparing jelly yourself, you can use ready-made semi-finished jelly products.

  • powdered sugar – 150-180 g (one glass);
  • vanillin powder - 1 package.

Making meringue is easy. Separate the whites from the yolks and pour into a mixing bowl. With a mixer at low speed, beat the product until white and, continuing to beat, add powder in small portions, and at the very end vanilla. The result should be a white stable mass. Place a sheet of parchment on a baking sheet and squeeze the protein mass onto it using a pastry syringe, giving it the desired shape. The baking sheet should be placed in an oven preheated to 100°C and kept there for 1.5-2 hours until completely dry. The resulting products can already be used to decorate a children's cake.

It was already mentioned in the previous section that in some cases, chocolate icing is an excellent decoration for a children’s cake at home. Now it's time to find out how to make it at home. You will need for this:

  • milk – 3 tablespoons;
  • cocoa powder – 4 teaspoons;
  • sugar – 3 tablespoons;
  • butter – 100 g.

Mix dry ingredients in a saucepan or ladle, add butter and milk, put on heat and, stirring, bring to a boil. Cook for 5-7 minutes. When the mixture has cooled sufficiently, to about 40°C, it can be applied to the surface of the cake and smoothed out with a wide knife. Place the cake in the refrigerator to allow the glaze to harden.

You can do it even simpler by using real chocolate for the glaze. To do this, you need to take 125-150 g of dark chocolate, break it into small pieces, put it in a small saucepan, the bottom of which is greased with butter, and melt it in a water bath. Add 50 g of butter into the melted mixture and stir until smooth. Allow the mixture to cool to the above temperature and begin decorating the children's cake.

Chocolate can be used to decorate a children's cake without melting it. The simplest option is to sprinkle with grated product or chocolate curls, which can be easily done with a regular vegetable peeler.

However, the most interesting way to decorate a cake with chocolate is to create chocolate patterns. To do this, you should draw or copy the desired patterns and/or inscriptions on a sheet of parchment, place it on a cutting board, melt the sweet product in a water bath, insert it into a syringe and trace pencil outlines with it. Place the board in the refrigerator to harden, and then place the resulting patterns on the surface of the cake coated with cream or covered with mastic.

  • powdered sugar – 150 g;
  • gelatin powder – 1 sachet;
  • vanillin powder – 1 sachet.

Chill the cream in the refrigerator overnight. Pour cream into one container, pour ice water into a container of larger volume and diameter and place the container with cream there. The dairy product must be whipped with a mixer until a strong foam is obtained. Now you can add powder and vanillin and beat the products again. So you shouldn’t “slow down” when working with it. Classic mastic is almost white, but when making the material, food coloring can be added to some of it. Mastic confectionery classic recipe:

  • powdered sugar – 950 grams
  • water – 50 grams
  • gelatin – 10 grams

Pour gelatin with cold water (1/5, that is, 10 grams of gelatin and 50 grams of water). Please note the water is in grams, that is, you need to weigh it. Let the gelatin swell for about 15 minutes.   • condensed milk – 200 g;
  • powdered milk or cream – 150 g;
  • powdered sugar – 150 g.

In a deep bowl, mix dry milk (cream) with powdered sugar. Gradually and in small portions add dry milk into the mixture, thoroughly kneading the resulting mass. The result should be a dough that practically does not stick to your hands. The finished mastic should be immediately wrapped in cling film so that it does not dry out before decorating the children's cake.

Recipe for mastic based on chewing marshmallows (marshmallow):

  • chewing marshmallows – 100 g;
  • powdered sugar – 250 g;
  • starch – 100 g;
  • butter – 50 g;
  • lemon juice – 1/2 teaspoon
  • water – 1 tablespoon.

Melt marshmallows in a water bath. Add water with lemon juice, softened butter to the resulting mass and knead thoroughly. In a separate bowl, mix starch and powdered sugar. Gradually add the mixture of bulk products into the marshmallow mass while continuing to knead. As a rule, the total time for kneading the dough until characteristic elasticity is obtained is 10-15 minutes. Wrap the finished mastic in film until you have to work with it and decorate the cake.

Cream and cream are the most common materials for decorating a cake. They allow you to mask the joints and unevenness of the cakes, and make flat and small voluminous decorations. In addition, cream is often used to decorate shaped confectionery products. The more complex the decor, the more patience, accuracy and precision of movements are required.

The main disadvantage of such decorations is their short shelf life.

Cream

There are many different creams. Most often, oil and protein are used for decoration.

The butter cream is dense, holds its shape well, but is greasy and heavy. The main ingredient is butter. You can add sugar, powder, plain or condensed milk with sugar, eggs, and flavorings.

The easiest recipe: heat the butter to room temperature, add powdered sugar in small portions, beat the mixture until fluffy. For 50 g of oil you need to take 2 tablespoons of powder. You can add dyes. The finished mass should be cooled.

Butter cream is used to level the surface, process the sides of the cake, create edgings, flowers, and ornaments. To work, you must have a pastry syringe or bag and nozzles. The more attachments, the more complex and interesting the decorations can be made.

Protein cream is airy and plastic, but during storage it quickly settles. The main ingredient is egg white. For 2 whites you need to take 2 tablespoons of powdered sugar and 3 drops of diluted citric acid. Carefully separate the whites from the yolks, pour the whites into a saucepan set on ice and beat until stiff foam is obtained. Continuing to stir, add 1/3 of all the powder in small portions. After 3 minutes the mass is ready. You need to put the remaining powder and citric acid, dyes into it, and beat.

Protein cream is often used for painting pictures, creating inscriptions, figurines of animals and birds.

Cream

Whipped cream is a delicious, creamy ingredient, but it quickly loses its fluffiness. As a rule, 35% fat cream is used to decorate the cake. Less fatty ones can only be used with gelatin. The cream must be heated to 80 °C and simmered for 25 minutes. Then cool to 4 °C and leave in the cold for a day. Beat the prepared cream until fluffy, increasing the speed. The temperature of the dishes, whisk, cream, and surroundings should be as low as possible. At 10 °C and above, cream does not whip well. Without stopping beating, gradually add powdered sugar and vanilla sugar. Cool the finished mass. For ½ cup of cream you need ½ teaspoon of powder and 1 g of vanilla sugar.

The cream will be stored longer and will not settle if you add gelatin to it. For 1 ½ cups of cream, 1 ½ tablespoons of powdered sugar and ½ teaspoon of gelatin are required. Dilute gelatin in ½ cup of cream and leave for 2 hours. Heat until the gelatin dissolves, and then cool to 40˚C. Whip the cream with powder, pour in the prepared gelatin solution, and beat again. The cream can be tinted.

It is better to apply whipped cream using a pastry syringe or envelope onto the prepared base. The cakes must first be coated with jam, chocolate or other thicker cream.

Buttercream goes well with berries and fruits.
